fall meal plan {what we ate last week}

I shared a meal plan this summer, and I thought it would be fun to do another “what we ate last week” post, but this time for fall. This past week was a mix of comfort food, go-to meals, and a couple of new recipes I wanted to try.

{sunday} Sausage and Potato Soup. This is a classic comfort food recipe that I look forward to making every time it gets cold out. It’s not even close to being healthy (hello one full stick of butter!) but boy is it good. My strange children only ate the bread we had with it. And Violet ate some sausage, but not any sausage that was in the soup. Weirdos.

{monday} One Pot Spaghetti and Meat Sauce. Monday was Violet’s birthday, so she got to pick the meal. She chose spaghetti, and this is pretty much the only way I make spaghetti with meat sauce these days. It’s so easy and the fact that it only takes one pot is awesome. This is a meal that everyone eats, yay! (Jona just doesn’t eat the meat in the sauce.)

{tuesday} Spaghetti Squash Parmesan. On Tuesdays Aaron has class so I usually just feed the kids something easy (that night it was a quesadilla for Jona and PB&J for Violet) and make myself something I can have for dinner and lunch the next day. I love spaghetti squash, and this simple recipe with marinara sauce, fresh mozzarella, and parmesan cheese was so good!

{wednesday} Asian Garlic Noodles with Chicken. On Wednesdays Aaron and I usually eat something together after the kids go to bed, so it was just the two of us eating this. Any dish that involves Asian spices, rice or noodles, and a spicy sauce is a winner for both of us. The kids had pretzels and hummus for their dinner.

{thursday} Chipotle Chicken Skillet Enchiladas. We love enchiladas, and these had sauce made with the adobo sauce that’s in the chipotles–so good! I love that you cook the sauce in the skillet and then bake the enchiladas in that same skillet too; easy clean-up!

{friday} Pizza night! My in-laws came to visit, and by Friday I am ready for a break from cooking, so we just ordered some pizzas. Violet didn’t want pizza (see… strange child) so she had a PB&J and lots of tomatoes and then proceeded to eat the sausage off my pizza.

{saturday} Leftovers. Usually we get take-out on Saturdays, but since we ordered pizza on Friday we just ate what was around the house on this day.

{breakfast} Peanut Butter Baked Oatmeal. The recipe calls for almond butter but I substituted peanut butter, and it was delicious! Jona wasn’t a fan, but Violet liked it. I also may have added a few chocolate chips on top (and skipped the figs).
