Weekly Eats: Meals that Work

Some weeks, I'm all about being adventurous: trying new recipes, experimenting with different vegetables, remixing a classic. Other weeks, I like to stick with what works. This week was definitely the latter. I wasn't in the mood for creative cooking, instead I just wanted some reliable meals I knew would taste good.

Clockwise from top right: 

1. Jalapeno Popper Chicken Soup with Bacon from Cinnamon Spice and Everything Nice. I made this a few months ago and begged you to try it. It was just as good this time around, good enough to justify eating soup when it's warm out.

2. Slow Cooker Mexican Shredded Beef from Mel's Kitchen Cafe. This beef, flavored with salsa, beef broth, and Mexican spices cooks low and slow all day until it's spicy, juicy and tender. In her recipe, she goes on to shred the beef and make enchiladas. I'm sure those are fantastic, but I took the lazy route and just made a big plate full of nachos. I needed easy this week, remember?

3. Easy Skillet Lasagna from How Sweet it is. You can tell from the sheer number of times this dish has been on the blog that this recipe is a household favorite. All the goodness of lasagna in just 30 minutes, what's not to love?
