This Chocolate Yogurt Cake from Mel's Kitchen Cafe definitely fits the bill. The yogurt and 5 (!) eggs are the reason for the richness and moisture, no doubt. While it's baking, the chocolate chips fall to the bottom and melt, making a sweet, fudgy layer. On top, I sprinkled on some toffee bits for a little bit of crunch. Top it ith a little whipped cream, and here's a cake I can raise a fork to.
Not that you need a reason to eat cake, but mine is that my birthday is tomorrow! What's your favorite kind of cake?
From the Archives:
- 3 years ago: making pretzel-coated chicken piccata...not cake but it is pretty good!

I am not a cake person either, but this look delicious!! I Hope you have the best birthday! Enjoy the whole weekend!
ReplyDeleteThank you so much!! :)
ReplyDeleteOh yum. I want to figure out how to make something like this in a single serve ramekin.
ReplyDeleteIf you figure it out let me know!! Beats having a whole cake in our house that I don't need to eat every night of the week!! :)
ReplyDeleteYum, that looks amazing!

My mom makes this amazing hot fudge swirl cake, I would say that is my favorite! Happy birthday to you - I would say have some ice cream with your cake! Because ice cream!
ReplyDeleteOh I am the same, I'm not huge on cake but I love a good moist one. This one looks/sounds deeeelish. Growing up I always asked my Mom to make cheesecake~ Happy early Birthday!! <3

Thanks Melanie!
ReplyDeleteOoh hot fudge swirl cake does sound good! Thanks Beth! You know I'll have some ice cream :)
ReplyDeleteMmmm, I love cheesecake, that always sounds good! Thanks Gina! :)
ReplyDeleteWheee, happy birthday! And though it's killing me a little to think about these things right now, you and I are totally compatible on the desserts. If it can't be ice cream then, that cake darn well better be chocolate!
ReplyDeleteThanks Anne! And I promise I don't mean to be torturing you with the desserts right now :) I think I'll need to do a Whole30 (or maybe just exercise a little more willpower) during the month of May since April has been a total train wreck when it comes to nutrition!
ReplyDeleteBut yes, if I'm going to do a non-ice cream dessert there had better be chocolate involved!!
Yeah, happiest b-day, sweets!! As for cake? Like you... I'm not super into sweets but when I do indulge... cheesecake or creme brulee are my go-to's for sure!! xo
ReplyDeleteYeah, among my other reasons I pretty much needed the Whole30 to quit overindulging on fancy cocktails and wine after all of my travels the last few months, so I know what you mean about that :) (And actually, while cake and ice cream always look super appealing when I see photos, I'm surprisingly really not that bothered. I guess being off sugar for 24 days really has made a difference in craving levels!)
ReplyDeleteHappy birthday!!! This cake looks delicious and I hope you enjoy every last bite. :) Cake usually isn't my favorite either (brownies are my fav) but this one looks delicious!
ReplyDeletei'm a huge cake person, and this looks ah-may-zing. 5 eggs and yogurt? imma make this very soon :)
ReplyDeleteMmmm, looks so yummy! I love a good chocolate cake, or good any cake. I don't need a reason to bake one other than that I might want one, but a birthday is a REALLY good reason. Happy Birthday Shea!
ReplyDeleteChic on the Cheap
that does look yummy! and happy early bday!! yahoo!
ReplyDeleteThanks Veronika!! :) And mmmm, cheesecake is always a favorite around here too :)
ReplyDeleteThank you Jess! (And I did, and then some!) Ooh yes, brownies are one of my favorites as well, I'm always on the hunt for my next favorite brownie recipe!
ReplyDeleteIt was good--yeah the 5 eggs didn't hurt a bit! Makes it so moist and fudgy!
ReplyDeleteThank you Lydia!! I totally agree, no reason needed but the birthday is definitley a good excuse :)
ReplyDeleteThank you Elle, it was good!! :)
