Weekly Eats: Finding a Balance

When it comes to food, I stand by the "all things in moderation" credo. I love food, and I refuse to deprive myself of things I love, even if they're not the healthiest (hello, ice cream!). However, I do try to be mindful of what I eat and what I feed my family. When I'm planning each week's meals I try to have a balance of light, healthy meals and those that are a bit more indulgent. Also, if the main dish is heavy, I try to have a healthy vegetable side to balance it out. This week's meals ran the gamut, health-wise.

1. Quinoa Chicken Curry Bowls from Pinch of Yum. I've never made anything quite like this before; chicken is cooked with curry paste and other seasonings, then chicken broth and tomato puree are added followed by other veggies and quinoa. After the quinoa cooks it sort of looks like a chicken and quinoa stew. You serve it in bowls and top with rice, cilantro, green onions, and anything else that sounds good. This had great flavor! 

2. Chicken with Sun-Dried Tomato Cream Sauce from Damn Delicious with roasted asparagus and potatoes. I could pretty much eat sun-dried tomatoes like candy, so that's what made me want to try this. Plus a cream sauce? What's not to love. I tried to balance things out a little by serving this with some asparagus. 

3. Cheesy Baked Tortellini from Brown Eyed Baker. Speaking of cream sauce, this  recipe has a tomato and cheesy cream sauce combo that the tortellini bake in. Then it's topped with even more cheese. This wasn't the lightest meal ever, but it sure was good!

4. Thai Ginger Stir-Fry from The Kitchn. You know I love a good stir fry; I'm constantly trying new recipes too. This was a good one, what I liked about it was that there were fewer ingredients than many stir-fries have. Quick, easy, and tasty. I substituted pork (chops, thinly sliced) for the chicken, but any meat (or none) would work.

  3. That chicken looks amazing and a perfect main dish for asparagus. I'm a little of both. On the one hand I love healthy food, lean grilled meats and could eat a plate of steamed vegetables. On the other, I like my sweets just a bit too much.

  4. Yum! All of this looks delicious. I don't know what to consider myself, haha. I love food in general and try to eat healthy - but I'm a dessert lover by nature so it depends on the day ;)

  5. I'm with you on moderation... except I'm doing this Whole30 thing this month, so there will be a bunch of not eating of certain things and tons of vegetable eating. I figure ice cream (and cheese! that tortellini looks good) will still be there in a month so it can't be so bad, ha :)

  7. Thanks Megan--the chicken (and the sauce!) was really good. I'm with you on the sweets--I could live with eating healthier "regular" meals, but I couldn't give up dessert!

  9. I'm sure the Whole30 will be a good experience, even if it means it seems like you're depriving yourself a little this month :) I've heard such good things from people who have done them!

  10. I'm definitely not the healthiest eater - I mean, if left to my own devices I'd probably have pasta and a cream/cheese sauce six days a week. This week I made pappardelle with mushrooms and pulled roast chicken (one the pre-made rotisseries at the grocery store) in a pecorino cheese sauce and it was so good.

    I love the sound of your thai ginger stir fry - i will have to try that!

  11. Ooh now I'm drooling...you had me at pecorino cheese sauce! Left to MY own devices I'd have ice cream for dinner every night!
