Weekly Eats: Meals with Kick

Although you won't see me enter in a hot-wing eating contest, and I can't even handle a full ladle of the hot salsa at Chipotle, I do love food that has some spice. Both of these dishes from this week packed a little punch.



1. Crock Pot Santa Fe Chicken from Skinnytaste. Any time you combine chicken, black beans, and corn in some sort of spicy sauce, it's a winner in my book. It's even better when you just throw everything into the crock pot and call it a day. The only thing I would have changed about this is that I should have added some avocado to go on top...yum!

2. Spicy Pork Pad Thai from Budget Bytes. I'm far from an expert on authentic Asian cuisine, so I have no idea if this is what pad Thai is "supposed" to taste like. But I've had a few different versions, and this is one I definitely like! I usually use sliced chicken or pork in dishes like this, so the ground pork was a nice change-up. I used sugar snap peas, but any veggie you have on hand would work too.

  2. Hmm, ground pork is indeed an interesting idea for a little something different! Will have to remember that. And I grew up with NO spice (or seasonings, really) but have become much more tolerant in the past few years. It's nice to jazz up a simple dish with it (since I like to cook with minimal ingredients - easy recipes only please!), but it's no fun when you can handle only two bites of things, so I've really worked on upping my abilities with eating spicy food. Starting Hendrik in from an early age and he likes it :)

  3. I love cooking with ground pork! It is a nice change from other meat. I do like spicy food too. Sadly I've been on a bit of a bland diet this week due to being sick but I'm ready to start eating real food again finally, not even sure what I'll start with but I think a hamburger is calling my name, lol.

  7. I try to do the same with Jona--I don't give him anything crazy spicy, but I do give him food that has a bit of spice and he does seem to like it. (Usually...) I used to have a really high spice tolerance, but I was sensitive to it when I was pregnant and I'm still trying to build it back up. I

  8. Yes, isn't it the greatest when you get your appetite back after being sick?! I hope you can enjoy some food this weekend! Now I'm the one who is eating the bland stuff... but just because I can't taste anything. I caught a cold that had been going around, fun.
