2. Salmon with Brown Sugar and Mustard Glaze from Martha Stewart. The glaze gave the salmon such good flavor. (I used Dijon instead of whole grain since I already had some in the fridge.) For a side, I roasted some asparagus and seasoned it with red pepper flakes and freshly grated Parmesan.
3. Chicken Enchilada Pasta from Budget Bytes. Chicken enchiladas, good. Pasta, good. Put them together, how can that be bad? Basically it's pasta and chicken tossed with a mixture of enchilada sauce and sour cream. Then topped with cheese. Yep.
Another highlight from the last two weeks was Aaron's and my anniversary dinner at La Bodega in Kansas City. We enjoyed some amazing tapas, like the albondigas (yummy little meatballs) and chicken and chorizo skewers pictured above. Forgive the lone chicken skewer in the photo; I started devouring them before I remembered to take a picture. Of course we had to have some Sangria to go with our meal; we were delighted to find out we made it just before the end of happy hour, so our Sangria and tapas were half price!
