It feels like it’s been a while since I’ve done a Dinner Tonight post; I have several recipes that I wanted to share but for one reason or another I haven’t gotten around to it. Until now, that is.
On
that list is this delicious Ginger Lime Chicken, from Martha Stewart’s Everyday Food. Originally, it calls for
chicken thighs, but as I’m more of a white meat gal I substituted chicken
breasts. Since the chicken breasts they deliver to my grocery store are
gargantuan, I cut them in half so they don’t take twelve years to bake.
I
served the chicken with Ginger Noodles from Rachael Ray’s Book of 10 cookbook. They were the perfect accompaniment to the chicken,
and they provided me with lunch all week. Leftover pasta makes me very happy.
