During the week I rely on quick-cooking, easy to throw together recipes because I don’t have time for a fussy meal. However, for Sunday dinner I don’t mind making something that takes a little longer to cook. This meal was the perfect balance, because while it wasn’t quick-cooking, it was simple to prepare.
I made the Herb Roasted Pork Loin recipe from Budget Bytes, and I didn’t change a thing about it. I love how flavorful the pork was, and I couldn’t believe how easy it was to make. I haven’t made many pork loin roasts, but it’s one I’ll definitely try again.
To go along with the roast, I cooked some egg noodles that I flavored with butter, sour cream, and parsley. As you can see from my plate, I need to work on my portions when it comes to pasta. (Does it make it better that the noodles were No Yolks and the sour cream was light? Maybe?)
