Lunch Time: Smoked Salmon and Orzo Casserole

When my mom came to visit last week, she came bearing gifts: among them, a  bag full of smoked salmon. Not just any smoked salmon, but salmon that she and Jeff caught and smoked themselves. Yum! So I've been trying to come up with different ways to use it (not that it wouldn't be delicious enough just on its own). I came across this Martha Stewart Everyday Food recipe for Chicken, Lemon and Dill with Orzo and I thought that the salmon would taste great in place of the chicken. And I was right--this casserole was easy to make and excellent to eat. I made the whole batch Sunday night so that I could take the leftovers to work throughout the week. But obviously this would also make a delicious dinner. 

Are you a smoked salmon fan? Other than with bagels and cream cheese, how do you like to eat it? I'd love your ideas!


  1. I love smoked fish as well as lox. Smoked Trout is my favorite, just by itself. mmmmmmmm
