Man, I wish I could take the credit for this mouthwateringly delicious jerk chicken! I got the recipe from Kitchen Belleicious, my new favorite cooking blog. I've tried other "jerk chicken" recipes before, but none have been memorable. This one is different. I was a little scared by the number and variety of ingredients Ms. Belleicious had me throw into the bag for the marinade (cinnamon, pickle juice, pineapple juice anyone?) but the result was an incredibly juicy chicken breast with a crispy caramelized skin. Hello, flavor! To accompany the jerk chicken, I just cooked up some rice, added black beans, cilantro, butter, and a little hot sauce. Mmmm.
