Dinner Tonight: Chicken for Two, Caprese for One

I seem to be on a chicken cutlet kick lately.  With a side of pasta and a salad, they're a perfect summer dinner.  I tried Rachael Ray's Sicilian Style Chicken Cutlets from her 365: No Repeats cookbook with orzo and a Caprese salad.  I dredged the cutlets (chicken breasts butterflied, then pounded into a quarter inch thickness) in bread crumbs seasoned with garlic, lemon zest, and parsley, then pan fried them in a tablespoon (or so) of olive oil.  It only takes a few minutes--the kitchen doesn't even get a chance to heat up!  Meanwhile, I cooked the orzo and seasoned it with Romano cheese and parsley.  For Aaron, the meal stopped here, but for me, I added a nice Caprese salad.


I made the salad with grape tomatoes, fresh mozzarella, basil, parsley, and olive oil.  I never used to like tomatoes until I started eating grape tomatoes--they're sweet and full of flavor.  If you think you're not a tomato fan, try these little guys.  I have yet to convince Aaron, but he'll turn, I know he will.
