Berry Tart (with a good personality)

So, this is what happens when you don't realize your tart pan is 11 inches and the pie crust recipe is supposed to fit a 9 inch pan.  I tried to make that sucker stretch, but it just wasn't happening.  But if you squint your eyes a little, the edges look decorative, rather than partially ravaged by some wild animal.  The berries though, they look rather lovely though, don't you think? But hey, she may not be pretty, but she sure did taste good!  (I'm sorry I did that--it bugs me when people refer to food as people.) I'm not going to write out the recipe, but I got it from my Taste of Home Cookbook.  Its a classic single-crust pie crust (that I should have made a double...whoops) with a layer of sweetened cream cheese, then berries.  Finally, I brushed warm apricot preserves over the fruit to make it pretty and shiny.  Mmmm's officially summer!
