Dinner Tonight: Chili in May

Chili, usually reserved for those, well, chillier months, was on tonight's menu.  It was fitting for this cold, dreary weather.  Although we try countless recipes in our household, this one was a standby from Rachael Ray's 365: No Repeats cookbook.  This chili has the usual suspects (ground beef, tomatoes, onion, garlic, beef stock) as well as black beans, beer, chipotle powder, cumin and shredded cheese.  To accompany this comforting bowl of deliciousness, I made "sweet" cornbread.  I got the recipe for the cornbread from my Taste of Home Cookbook, and although it was called "Sweet Cornbread", my usual go-to Jiffy box tastes sweeter.  Why, why do I try to beat that little blue box of perfection?  Oh well, a little honey and butter sweetened it right up.  Well, I must go warm up now.  Unfortunately, I can't type with gloves on.  I've tried.  The results look something like this: sainet;ai hieanf eairojt.  Have a warm, comfy night!

  1. Yum. Now I want chili. That looks GOOD. And that cookbook sounds like a cool idea!

ps. your blog always makes me so darn hungry. I would be jealous of your amazing cooking skills, but my husband cooks for me, so I will content myself to drool over your photos until he gets home and I can throw an apron at him.

  2. I can eat chili 365 a year. your dinner looks delicious.

I really appreciate hearing from you!
