Dinner Tonight: Spanish Chicken Stew

For dinner tonight I made "Big, Thick, Hearty Thighs Spanish Style" from Rachael Ray's 365: No Repeats cookbook.  You can laugh all you want about the goofy name and my obsession with the Ray, but this meal was delicious.  I won't go into much detail, but basically I switched it up and used chicken breast (cut in half--this chicken was very well endowed), spicy sausage (the fully cooked kind), Yukon gold potatoes, onion, thyme, parsley, chicken stock, roasted red peppers and lemon.  

I toasted and sliced up some bread, since every stew needs a dipper.  Although I wouldn't consider this warm, 80 degree day stew-weather, we had no trouble cleaning our plates.
